AOP Vacqueyras

Grape varieties: Mainly Grenache - Syrah. Harvest is 100 % destemmed
Yield: 35 hl/ha
Terroir: Clay and limestone.
Winemaking: Natural fermentation, without addition of any sulfite. The harvest is protected with an inert gas filling. Filtration at 0.3 μ before bottling.
Tasting: Purple robe, black fruits and morello cherry aromas. The mouth is well balanced and full bodied, tannins are soft and persistent.
Food pairings: Lamb leg from the Ventoux seasoned with thyme and rosemary, small grenaille roasted potatoes with truffle and fresh olive oil.
Serving temperature: between 16°C and 18°C
Ageing potential: 5 to 7 years
