Vieilles Vignes

AOP Châteauneuf du Pape

Crushed strawberry, black fruits. Velvety mouth, concentrated and balanced by exceptional fine tannins.
Grape varieties: Grenache 70%, Syrah 20%, Mourvèdre 10%.
Age of the vines: between 80 and 100 years
Yield: 18 - 22 hl/ha
Terroir: Rolled pebbles (Cabrières, l’Arnesque). Sand (lieu-dit: Bois Dauphins).
Winemaking: Harvested by hand. Fermentation: double sorting (in the vines and in the cellar) 21 to 24 days of maceration with punch down and pumping over. Ageing: 70 % stainless, 30 % various oak containers for 12 months, final maturing of 6 months in Foudre.
Tasting: An hymn to the Grenache, crushed strawberry, black fruits. Velvety mouth, concentrated and balanced by exceptional fine tannins.
Food pairings: Wild game, wild boar stew, ripened cheese…
Serving temperature: between 16°C and 18°C
Ageing potential: 15 to 20 years
