Perfect balance between the fruit and a knowledgeable maturing in the barrel. Beautiful maturity, even when drunk very young.
Grape varieties: 45% Syrah, 45% Mourvèdre, 10% Grenache Noir
Age of the vines: 35 years
Yield: 40 hl/ha. Plot selection of the oldest vines.
Terroir: Rolled pebbles from the Durance river (which flowed through the valley well before the Rhône).
Winemaking: Cooling of the must. 3-day pre-fermentation period. Delestages (rack and return) and thermo-regulated fermentation. 1 year 400 liter oak barrel ageing.
Tasting: Perfect balance between the fruit and a knowledgeable maturing in the barrel. Beautiful maturity, even when drunk very young.
Food pairings: Red meat, game, strong cheese, pepper steak.
Serving temperature: between 16°C and 18°C
Ageing potential: 4 to 6 years
